POPCORN SALAD

Servings: 12

Dressing:

2 Cups of Mayonnaise
2/3 Cups of Sugar
2 Tablespoons of Vinegar

​

Ingredients:
1/2 cup green onions, thin sliced
2 cups of celery, chopped
2 cans of sliced water chestnuts, chopped (optional)
1- 2 lbs. of cooked bacon, crumbled (reserve some for top)
2 cups of shredded cheddar cheese (reserve some for top)
12 cups popped white hull-less popcorn

 

Directions: 
Mix sugar, vinegar and mayonnaise in a large bowl. Add the onions, celery, chestnuts, bacon, cheese. Refrigerate until time to serve. 

Just before serving, stir in the popcorn, and top with rest of cheese and bacon.

CARAMEL CORN RECIPE


16 C. popped corn 
1 C. packed brown sugar 
1/2 C. butter 
1/4 C. light corn syrup (or half molasses and light corn syrup) 
1/2 tsp. salt 
1/2 tsp. baking soda

Mix brown sugar, sugar, butter, syrup & salt in a 2 1/2 qt. glass bowl. Microwave, uncovered for 2 1/2 min. Stir. Microwave to boiling, 30 sec. Boil in MW 3 minutes. Stir in soda. Place popped corn in a large brown grocery sack. Pour cooked and expanded syrup mixture over the corn in the bag. close bag by folding it several times. SHAKE well to coat corn with caramel. Microwave on high for a total of 2-3 min. shaking the bag every minute. Keep in bag until corn has cooled shaking every so often so it doesn't stick together. This is really easy and VERY good! I'll never make the mess in my oven again!!
